Poultry meat in walnut sauce – festive dish Satsivi

If you want to eat a cold dish in the heat and are a meat lover, you should stop at Satsivi. This is an easy-to-prepare dinner – meat with walnut sauce. Satsivi roughly means cold. so this is a meat dish that should be served cold.

Satsivi is the crown of the toast table in Georgia. It is sometimes compared to the Indian dish curry, which is made with meat and spices, but is not meat with walnut sauce. However, walnuts, which are not found in Indian curry, give a unique flavor to Satsivi. The secret of the taste’s uniqueness is also in its preparation method.

Ingredients:

  • Flour – 1 tablespoon
  • Vinegar – 1 tablespoon
  • salt to taste
  • Red pepper, crushed
  • Cinnamon – 1 tsp
  • Turkey or chicken – 1 piece
  • Walnut – 600 g
  • Onion – 2 heads
  • foreign spice – 2 tablespoons
  • Yellow flower – 1 tablespoon
  • Dried coriander, ground – 1 tsp
  • Cloves – 2 pcs
  • Garlic – 5 cloves

How to prepare Satsivi – meat with walnut sauce

As we already said, Satsivi is a poultry meat with walnut sauce, so you can use chicken or turkey.   

Put the cleaned, washed meat in a pot, pour water, then put it on fire, and cook it halfway.
Remove the meat from the juice, put it on a tin sheet, and put it in the oven for roasting. Remove the fat from the broth and fry the finely chopped or minced onion in it. 

While simmering, remove the fat from the broth and mix it so that it does not burn. Add flour and mix well. When it gets a little pink, pour the broth. 

Pass the walnut through the meat grinder twice. Divide the yellow flower, salt, and garlic, mix it with walnuts, and rub well with your hands until a sufficient amount of oil is extracted. Separately divide foreign spices, cinnamon, cloves, coriander, pepper, and walnuts. Dissolve all this in warm broth, stir well, pass through a sieve or blend and put on slow fire to cook. Before it boils, put the fried meat cut into pieces and remove it from the fire as soon as it boils. 

Add vinegar. When it is ready, take the dish out on a plate and pour oil distilled from walnuts on the table before serving.
